Whether you are new to the idea of sustainable foods or a specialist in the area, this course will guide you through the opportunities and challenges of making sustainable food system changes happen. You will be taken on a journey from farmers’ fields, into food processing factories, out to farmers’ markets and restaurants, onto our dinner tables, and back. By immersing you in the most relevant literature and best practices available, this course will answer many of the current most pressing food system questions. You will be introduced to the areas of biotechnology, organic farming, globalization, climate change, food security, and other current topics in local and global food systems.
